Ingredients
- 1.5 cups whole milk
- 5 tbps cornstarch
- 1 cup granulated white sugar
- 1 cup semi-sweet chocolate chips
- 1 14oz can of unsweetened coconut milk
- 1 9 inch pie crust, either store bought or homemade
- 1 can whipped cream, can use homemade whipped cream
Instructions
- Use a fork to pierce the crust before baking.
- Bake crust according to recipe or package directions, until golden brown. Once baked, allow the crust to cool down.
- In a medium sized mixing bowl, combine 1/2 cup whole milk and cornstarch. Mix until cornstarch is dissolved with no clumps. Then, set aside.
- In a medium-sized saucepan over medium heat, whisk together the remaining cup of whole milk, coconut milk, and sugar. Bring to a simmer, whisking often.
- Stir the cornstarch mixture before slowly adding to the coconut milk mixture, being sure to whisk constantly. Continue whisking until the combined mixture becomes thick, like a thick pudding consistency. This is the haupia. Make sure this mixture is thick before moving to the next step.
- Divide the haupia mixture into two separate bowls and set aside. Add chocolate chips to one of the bowls and stir until all chocolate chips have completely melted and is well combined.
- Pour the chocolate haupia mizture immediately to the cooled pie crust and smooth out with a spatula.
- Carefully layer the remaining haupia mixture over the top and smooth over until even.
- Cover and refrigerate for at least 8 hours before adding whipped cream on top.
- Once cooled, add your whipped cream topping, slice, and enjoy!
